Giant couscous / Fregola Sarda


Made from small balls of pasta dough which are toasted (hence the uneven shades within the mix), fregola originates from the island of Sardinia, although variants arise throughout the Mediterranean area and Middle East, and are also known as giant, or Israeli couscous.

Fregola can be eaten with a sauce like a conventional pasta, but is particularly good served cold as the base of a pasta salad, providing a firm base texture.
